What's the difference between following and subscribing?

Following is free and always available. Subscribing unlocks more, for a monthly price.

Every network has a free tier for anyone who follows it: content in your feed, live notifications, free episodes and Bites, and metered previews.

On top of that, a network can offer one paid subscription, billed monthly or annually, annual billing usually works out cheaper.

The subscription lists exactly what it includes on the network page, that can be subscriber-only Loops, early access to new episodes, entry to Lives that normally cost Sparks, a subscriber badge, and on selected networks entry to the immersive stage.

Pick monthly or annual on the network page and subscribe there.

Tip: Subscription levels are rolling out network by network during beta, starting with Kairos, so you won't see them on every network yet.
